Good Morning Ladies :)

First off I have to say I am SO proud of myself, like seriously I was bragging to my entire family haha!! I know that totally sounds cocky and you all are probably thinking, wow!! No seriously you all would be so proud too :)
I learned how to take inside photos with my Canon 40D. I have been having this trouble for so long.
It was really bothering me. But last night I had amazing luck I knew what I was doing, finally. I had my settings perfect. My photos turned out just how I wanted them to. I was so still am so proud of myself. I couldn't stop smiling. :-D
Also, if you haven't noticed I like putting photos on my blog. I like taking photos of the things I am doing, which makes my blog more personal to who I am. I have said before I love cooking, I love looking for new recipes online or magazines or from friends and family. When I try new recipes I have been taking photos of the cooking process...well I was taking those photos with my iPhone. But last night my sister suggested I use my Canon 40D to take the photos. Seriously the first thought was, No Way!! am I bringing my nice camera into the kitchen. But then I thought what better way to get more practice than take my recipes/cooking photos with my good camera. So she went and got it for me and well, the photos below are of me making a most delicious, totally yummy, something to write home about Chicken Tortilla Soup. It is so delicious. It is the pefect thing to make on a cold day.
By the way, last night was not cold, but I love this soup so I make it in any season/weather :)

{Oh and you need to excuse how awful I look. I didn't think I would actually be in any I didn't clean myself up. Seriously I look make up, hair in pony, sweats, tank top with bra hanging out.!!!
Now that I am looking AND posting this photos, I am thinking I need to be prepared next time, just in case :)}
5-6 boneless skinless chicken breasts
2 cloves garlic, minced (1 tsp. garlic powder)
1 cup chopped yellow onion (medium size)
2- 15oz. cans whole peeled tomatoes, mashed
2- 10oz. cans mild red enchilada sauce
4 oz. can chopped green chile peppers
2- 10 3/4oz. cans condensed tomato soup
14oz. can chicken broth
10oz. can corn
1/4 cup ketschup
1 bay leaf
1 tsp. salt
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/4 tsp. black pepper

sour cream
grated cheddar cheese
baked tortilla chips

Bake chicken.
Combine all remaining ingredients in large pot. Cook over medium heat, stirring ocassioanly until at boil.

Shred chicken and add to soup. Ladle into soup bowls.
Top with sour cream, cheese, and torilla chips.

This recipe feeds 5-7 people. We always end of freezing the leftovers.

i need to figure out how to keep onions from making me cry

aarika's photo skills

 momma's photos skills :)

it was a family making soup, aarika making tortilla chips,
and momma washing my dishes ha!

hubby came in for a beer...and a photo opp ;)

whenever i cook, i make a mess, a serious mess. it was WAY worse than this,
but momma couldn't handle it anymore. she cleanred most of it up.

aarika and her mad tortilla chips making skills lol

she cut them in perfect trianges, and seasoned them :)
they were delish!

gotta have lots of some cornbread and honey with soup

please excuse the ugly dishes, they are not mine. they are my stepdad's.
they are so awful, but i guess they still hold food no matter what they look like right? :-/

You really need to try this soup. It is a little bit spices, so your nose will run a little...but it is
Everyone who has tried it loves it. Hubby and I prefer a little less tortilla chips in the soup, whereas my momma likes to put chips on the bottom of the bowl, before putting in soup, and on top of the soup. So you gotta just play around with what you like best.

I just looked on the weather channel and it doesn't look like it will be getting cold any time soon here in Texas, so if you live here at least in the DFW area you may need to wait to cook this meal. But if you are from the LA area in California you have been getting some crazy weather, hail storms??? Really??? I cannot believe my home is getting crazier weather than I am here in the south. I have to say I am a little disappoint...I wanna be back there. It is considered a treat for us haha!! :)

Hope everyone has a great weekend!!
I don't have any plans yet, but I am trying to think of something fun.
