Southwestern Stuffed Peppers

morning ladies!!

first....when i got home from work last night, i walked into these beauties on the table.
just because he loves me.

second...time for saw it. pinned it. did it. with Stephanie and Katie.
i have been searching for new recipes constantly because I feel like we always eat the same things... so tired of it. thank you pinterest for coming to my rescue. for everything!

southwestern stuffed peppers
i changed it up a bit just to make it my own, but the whole idea is from pinterest.

ingredients:
red peppers
lean ground turkey (1/2 pound)
can of pinto beans
can of black beans
can of corn
cumin
taco seasoning
pepper
cheese for topping 
avocado

cook ground turkey. then add in beans and corn. i washed my beans and corn to get off all the extra non-needed sodium. mix all together. add about 1 tablespoon of cumin, a just a pinch or two of pepper, and about 1/2 tablespoon of taco seasoning. heat up for about 10 min on low.

cut peppers in half. clean all the seeds out. fill peppers as full as you want. fill a glass pan with about 1/2 to 1 inch of water. place peppers inside and cover with foil. cook 350* for 20-30 min depending on how soft you like your peppers to be. i like mine a littler hard, tony likes his soft...so we cook about 23 min as a compromise ;) take foil off. sprinkle cheese and cook until melted.

we added some avocado last night to mix it up a bit. added some yummy flavor. i really enjoy this recipe. we always have tons of the turkey/bean mixture over and use it for tacos, taco salad, nachos. its yum!
