Greek Chicken

Thanks to Pinterest, I am experimenting much more with our dinners. I am so tired of lemon chicken. Season salt chicken. I want new, fresh and healthy dishes. I have been on the hunt! And surprisingly I have done so well. I am pretty stoked to share some new recipes, you'll love them!

This Greek-Inspired Chicken recipe is absolutely delicious  There is so much flavor and goodness. Seriously, who would have thought chicken made at home would be this good. But it is! You best try it!

1/3 cup wheat flour {or all purpose flour}
a few pinches of oregano
a few pinches of black pepper
a few pinches of salt {used sea salt}
1 1/2 lb of boneless, skinless chicken breast {cut in half lengthwise}
3 tablespoons of olive oil
2 garlic gloves, chopped
1/2 pint tomatoes, halved
3 oz of large pitted black olives, halved
1/2 cup crumbled feta cheese
handful of fresh spinach

{I didn't measure any of the ingredients, I just winged it and it came out perfectly}

1. Heat 2 tablespoons of oil on a large skill over medium heat.
2. Place flour on a large plate and scatter oregano, salt and pepper. Dredge each side of the chicken breast in the flour and set onto the heated oil. Repeat for each breast. Cook about 4-5 each side or until browned.
3. Remove the chicken from the skillet and set on a plate. Turn the heat to low and add the remaining tablespoon of oil, followed by the garlic. Stir for 30 seconds, then add the tomatoes and olives. Stirring often and cook 1-2 minutes {I think I cooked for about 5 minutes}.
4. Place spinach on plate, then chicken on top of spinach. Top the chicken with the tomato-olive-garlic mixture and sprinkle feta cheese.  

Super easy and quick. Totally amazing and delicious!
