easy peasy mahi recipe

I am no Betty Crocker or Giada but I do love to cook/bake and I do love me some clean, healthy, fresh foods. Oh and easy too. I go to work and school all day, come home and work out, so the last thing I want to do is be in the kitchen for hours fixin' up dinner. Insert a delicious Mahi Mahi recipe topped with veggies.

I literally just made up this recipe trying to use up veggies so they didn't go bad. And I am so glad I did. I love how fresh and light it is. I mean it should totally be in Cooking Light Magazine.

All you need is Mahi {or I guess any fish would do} and all the raw veggies you want.

Use a glass pan and put foil surrounding it. Pour a little EVOO on the bottom of the foil, put the Mahi in and put a little more EVOO on top of the fish. Sprinkle a little sea salt and some pepper over it. Bake on 350* until fish is ready. Ya know when a fork pulls it apart easily. 

Cut up tomato, red onion, olives, avocado, and cucumbers {and any other veggies you choose}. Now top the fish with all this yumminess and enjoy!!
