SPD {Recipe}

Morning loves!
I am so happy it's almost Friday! For one, I get to share a delicious recipe with you that will not, I repeat will not, disappoint. For two, I have no school on Fridays. And three, my little red-head sis is graduating from Berkeley on Saturday. Translation: Driving up to see her walk the stage!

Two of my favorite bloggers {Stephanie Katie}, seriously they are must reads every.single.morning!, are back with Saw It.Pinned It. Did It. So lucky for you, I made dinner this past weekend for the man and decided you all must make it as well.

Parmesan Garlic Shrimp

Ingredients

1 pound uncooked shrimp
1/4 cup olive oil
1/4 cup chopped fresh parsley
3 garlic cloves (minced)
1/2 teaspoon red pepper flakes
1/4 teaspoon black pepper
1/2 cup toasted Italian breadcrumbs
1/2 cup freshly grated Parmesan cheese

Directions

1. Arrange peeled shrimp in a 11 x 7 inch baking dish. Spread out so they aren't bundled on top of one another.
2. Coat shrimp with olive oil and sprinkle parsley, minced garlic, crushed red pepper and black pepper.
3. cover and back @ 300* for 15 minutes.
4.Turn shrimp over, drizzle with olive oil, and sprinkle with breadcrumbs and grated Parmesan cheese.
5. Bake uncovered for 5-10 minutes.

We had plenty of leftovers, so we had for lunch the following day. I got a test from Tony saying this is definitely a keeper recipe. Love hearing that! :)

Weekend are for relaxing and drinking, right?!?!

I seriously wish I was sleeping in or waking up with the beautiful view of the ocean/lake instead of pretty for my school and work day. I am on the hunt for a job that has Mondays off or a job that I can have my own schedule and work from home. Sleeping in all weekend, to getting up at 5am really isn't fun! 

Anyways, our weekend was pretty relaxed. Didn't really go anywhere or do anything. Which is sometimes actually very refreshing and nice, although I do with our apartment had air conditioning. 

one. ToneItUp series workout. Gettin' summer ready.
two & three. Mexican date night at home. One of my favorite things we do.
four. while out doing errands we stopped for some pizza in Calabasas. And may or may not have gotten a SusieCakes red velvet cupcake :)
five. part of the Trader Joe's mix it up six pack
six. homemade berry ice cream in our Vitamix
seven. oat pancakes with homemade peanut butter #foodheaven and black coffee to start off our Sunday
eight. Tony and I stepped it up a few notches on our leg work out. holy smokes!! Hello jello legs!! And I don't think I have sweat so much since last summer. I swear Sunday was the hottest day of the year so far.
nine. Limited edition Apothic Rose. Go get yoself this bottle. You won't be disappointed.

That pretty much sums up my weekend. Wow and looking at these photos as I am about to post, it looks like all I do is work out and drink :-/ I swear I don't drink that often or that much. But I do beleive weekends are for enjoying right?!?!
